Camp Trefoil Food Service Manager - New York State
We are seeking to fill the Seasonal Food Service Manager position for the upcoming camp season at Camp Trefoil which is in
Harrisville, NY, located on the outskirts of the gorgeous Adirondack Park. Campers
get the ultimate high adventure and wilderness experience while spending a week
in an intimate, outdoorsy setting. Trefoil features GSNYPENN’s only high and
low ropes course! With its proximity to the Adirondack Park, Trefoil is a great
location for any camper looking to explore the outdoors! Most campers spend
their week sleeping in a-frame units, or our famous yurt!
Job Summary:
The Camp Food Service Manager is responsible for the planning and preparation
of all meals, including coordinating food orders. The Camp Kitchen Manager is
also responsible for ensuring all safety and sanitation practices are
maintained in the kitchen area at all times per NYS Health Department
guidelines.
Essential Job Duties
and Responsibilities: (Additional duties may be assigned)

Manage daily operations
of the camp food and dining service.
·
Provide timely,
well-balanced meals for campers and staff.
·
Prepare requested
cookout ingredients for groups prior to scheduled cookouts.
· Be familiar with camper
and staff special dietary restrictions, and provide meals that meet their needs.
· Ensure proper cooking
and preparation procedures for gluten free and other allergy restrictions are followed.
·
Communicate with parents
regarding their child’s dietary needs, as needed.
·
Supervise and manage the
Camp Kitchen Aide.
· Keep the Camp Director
informed of the Camp Kitchen Aide’s performance, morale, and conflicts.
·
Assist with the Camp Kitchen
Aide’s performance appraisals.
· Oversee the daily
inventory and weekly ordering of food, as well as any other necessary equipment
and supplies.
· Ensure routine
maintenance, sanitation, and upkeep of the kitchen occurs throughout the camp
season, maintaining high standards for cleanliness and safety per Health
Department guidelines.
· Conduct daily checks of
all camp refrigeration units, maintaining a log of observed temperatures;
report any problems in a timely manner to the Camp Director.
· Create and prepare a
menu that is nutritionally balanced for campers and staff.
· Promote the reduction of
waste and recycle whenever possible. Participate in the camp’s compost program.
· Prepare the kitchen for
use and communicate with the Camp Director any needs prior to the start of the
camp season.
· Act as a leader and role
model to other staff members and communicate with other staff members in a way
that is positive and encouraging.
· Maintain a positive
attitude and enthusiastically participate in themed meals and other meal
related activities.
- Assist with weekly camp clean up,
including sweeping, mopping, sanitizing, trash pick-up, etc.
- Adhere to all COVID-19 protocols required
by NYS Department of Health and GSNYPENN. Must provide proof of COVID-19 vaccination.
Supervisory Responsibilities:
The Food
Service Manager supervises the Camp Kitchen Aide
Minimum Qualification Standards:

Be at least 21 years of age.
·
Ability to schedule and
supervise staff; prior supervisory experience
helpful.
·
ServSafe Food Protection
Manager Certification
·
Ability to work within a
budget and purchase supplies effectively.
·
Believe in the Girl
Scout mission.
· Possess good character,
integrity, patience, sense of humor, enthusiasm, and willing to be a part of
the camp community.
Knowledge, Skills, and Abilities:

Excellent verbal communication skills.

Strong organizational skills including
the ability to manage multiple projects and details simultaneously.

Ability to work
productively in a fast paced, stressful environment. Knowledge of and
experience with food service for large groups, including ordering, inventory,
budgeting, food preparation, family-style and buffet style serving, cleaning,
and industrial kitchen equipment.
Physical and Mental
Requirements:
· Exerts
up to 50 pounds of force occasionally, and/or up to 20 pounds of force
frequently or constantly to move objects.
· Ability (and willingness) to live in a camp setting and
work irregular hours.
·
Walking on uneven
terrain, up and down hills for distances up to ½ mile
·
Endurance to meet
emergency needs
